This would fool anyone who didn't know it was gluten free!Jun 11, 2008
By Leslie Metcalf We all loved this mix! I had never made this before so I decided to give it a try and use the banana recipe on the box. I substituted oil to make it casein free also and it turned out fabulous - I will be making this a stable in my household! Thank you!!!

By C. Phillips I absolutely love 123 Gluten Free products!!! These muffins are easy to make and taste great!! No one would know they are gluten free! Super flavor and texture! The sugar cookie and pound cake mixes are wonderful too! Highly recommend!!

Update to my original review: I found out their xanthan gum is grown on corn, although they state that processing removes all of the corn from the xanthan gum. We found this out the hard way...my son had a reaction after eating this product 3 times. He is VERY sensitive to corn so other corn allergics may tolerate it without issue. Original review revised: This is the best gluten/wheat/egg and almost corn free muffin mix I have found (it's free of a lot of other things but these are the allergies we have to worry with). I use ground flaxseed in place of the eggs and follow the directions on the box to make banana muffins and they turn out perfect every time. Don't skimp if you're out of unsalted butter, go get the exact ingredients or they won't rise as nicely...trust me, it's worth the trip. Everything I've tried from 123 Gluten Free has been 5 star. They maintain excellent allergen standards and taste better than anything else I've tried. Follow the baking directions to a T and you won't be disappointed.

By No Rules, Just Right ...That was my first thought as I opened the package. Since this wasn't marketed as a SPICE muffin/quickbread mix and none of the other reviewers mentioned it, this was a surprise. I checked the box and sure enough, cinnamon is in the mix. Well, in my case, that is just fine. I actually have been adding a little cinnamon to my other gluten-free-muffin-mix of choice from time to time: The Gluten-Free Pantry Muffin & Scone Mix, 15-Ounce Boxes (Pack of 6). However, this additional ingrediant might not work well for everyone. One of the benefits of the other mix is how versatile and accommodating it is to variations.
Preparing these muffins can't be easier. Instructions are very clear and simple, and unlike the other mix (link above), the temperature and cooking times are spot on (I pulled mine out of the oven about 30 seconds early).
The box says the mix makes "15 large muffins". I have three 6-cup standard-sized muffin pans (Fox Run Stainless Steel Muffin Pan), total 18 muffin cups, and IMO the mix filled these three pans, all 18 cups, perfectly. Any more batter and the cups would have been overflowing.
The end result was good tasting, light, and fluffy muffins. I always use muffin papers and the paper does not seem to stick to the muffin as those made by the other mix.
Unlike the other gluten-free mix, these had no problem browning -- in fact, they are perhaps a little too brown, even considering the cinnamon. The other muffin mix is very blond and looks identical to regular muffins that are not gluten-free. In fact, some reviewers of that mix reported having problems getting those muffins to brown. This mix here however is inherently brown, inside and out, even before baking. Even so, the muffins are not dry. They are perfectly moist and fluffy and I do like the spice taste. However, the spice is very evident. I had made the blueberry variation, and the spice was so overpowering I could barely tell I was eating blueberry muffins. I will probably not use this mix with blueberries again (I did so this time because I didn't realize this mix had any spices until I started). I think the other mix is better with blueberries, however I do like these muffins and I suspect the mix will work very well with bananas.
Bottom line, this mix is not a substitute in my kitchen for The Gluten-Free Pantry Muffin & Scone Mix, 15-Ounce Boxes (Pack of 6); rather, it is a new addition! Both mixes are good and which one I buy next will probably be determined by price, to be honest.

By Sylvia Used one pkg. of this product to make muffins, appearance and texture were good, but they had a chemical taste and unpleasant odor and I won't use the other two packages.
