Truly Great GF PancakesFeb 18, 2009
By Stan Miastkowski I like these as well as standard wheat pancakes. And because they're gluten-free, I can eat as many as I want. HINTS: Put a bit of REAL vanilla extract in the mix and serve with REAL maple syrup, like we have here in New Hampshire.

By Darla Haven't used it for pancakes. I do have to add a little more liquid than recipe calls for because it gets so thick. Very good product.

BEWARE! Ingredient Change -- includes vanillaFeb 11, 2009
By Mary Sleger We are allergic to vanilla, and the new recipe of this old favorite includes "organic vanilla flavor."
The old recipe did not include this as an ingredient & I'm really bummed since you can't return food products for a refund :(
I guess the local food pantry will get these 3 bags ...

The Best of GF Pancakes and Organic too!Mar 03, 2011
By M.E.'s Family We have been using this GF pancake mix for a while and we love it! I choose this brand because it is also organic. I see there are a lot of complaints about the pancakes being dry, and that is true if you use the amount of milk specified on the package. However, I must say that there comes a point in every person's life where they need to use common sense and do the obvious; improvise! It isn't like it is a box of cake mix and you get one try to get it right; the pancake mix will make about 5 batches. So if your first batch flops, then tweak the next and keep tweaking until you get it right for your taste. Much more productive than just complaining : ) The pancakes are not dry if additional milk is added. Nothing else needs modifying if the milk is increased.
When we first tried these, we added more baking powder, however we discovered the additional baking powder is not necessary. We make ours without egg and use rice milk, and they come out wonderfully. We nearly double the milk from what the package recommends and this compensates for the egg as well. Generally once a week we make an entire bag and freeze the leftovers. Our oldest daughter then warms up the frozen ones throughout the week.
For sweetener we use agave or brown sugar. Brown sugar will make them much sweeter, if you like them that way. With these or most any GF baking, the texture of the finished product is finer if you dissolve the sugar in milk first. The mix does work for other baking uses, even cookies, but again liquid generally needs increasing. If you ever run out of GF bread/rolls, pancakes work in a pinch for hot dog buns and even sandwiches/rollups. We even used a pancake to make the GF crust of a mini pizza once. Granted I wouldn't serve them like that to company, but my Celiac kid has learned to be creative!
The pancakes do tend to turn out lighter in color than what you will get with wheat pancakes, but I'm not sure why people have an issue with the color. If they taste good, then what difference does the color make? If you get hung-up on expecting GF foods to be exactly like their wheat counterparts, you set yourself up for disappointment. If you want a darker pancake, then turn up the heat and be ready to flip them very quickly so they don't burn.
This is a great mix and I highly recommend it! And if at first you don't succeed...

Not the best...Apr 08, 2009
By Rebecca Buczinski I'm not crazy about these pancakes. They are super thick and the cornmeal that they put in them make them almost crunchy. They aren't light and fluffy like other gluten-free pancakes i've had. I might try to make waffles out of them and see how that is. Overall, anything is okay with butter and syrup, so I'll eat them, but won't share them with non-GF friends.
