alternative to wheatApr 21, 2008
By Jill Groebner Arrowhead Mills offers consistently high quality products that we depend on. I do prefer the white/light spelt flour when I can get it, because it will bake up a bit better, but this whole grain flour works as well to create bread and cookies for those of us who can tolerate some gluten, but not wheat.

I use three cups of bread flour 1 cup of this spelt flour and make terrific no knead bread. Add a little vital wheat gluten for lift if you are not sensitive and a little rye flour to help jazz your yeast -- especially if you are working with sour dough. the result is terrific.
Update 12/10/11 Still love the flour. Rethinking my subscription with Amazon as the last batch came poorly packed, with two of four bags torn. it was a mess.

By 4314 I like it in baking scratch lemon cakes, Bakers Chocolate brownies, fruit cobblers,etc. I don't miss white flour in baking. I have food allergies to traditional wheat but I can use spelt. Whole grain spelt bakes up very light much like traditional white flour. Whole wheat flour is heavy and very graham tasting. Spelt has a slight graham taste and is very good with pineapple.

The only "whole wheat" flour I use in my kitchen!Mar 10, 2009
By N. Parker In a time when everything seems GMO or hybrid-ized to utterly unrecognizable, the ancient strain of wheat -- Spelt is a refreshing find in today's fast food world. While I am not gluten sensitive, I do find that my system can tolerate Spelt products much more than our modern strains of wheat. Perhaps it is because Arrowhead Mills Whole Grain Spelt Flour is organic, but whatever the reason this flour is the only one that I use when making whole wheat breads, muffins, pancakes, pie crusts and more. As a whole foods cook, Arrowhead Mills helps me to stock my pantry with a variety of grains, pulses, seeds and beans...and Amazon makes it easy for me to order just what I need, when I need it.
