Half the price of xanthan gum. Works really well.Nov 29, 2008
By Lisa M. Mims If you are new to gluten-free baking, you should be aware that you only need 1 teaspoon of this binder to each cup of gluten-free flour. That means that if you were to buy this in this volume, and you are baking for one person, you would never use it up before it went bad.
On the flip side, if you are cooking gluten-free for a family, this is a bargain, not for the price, but for the availability: guar gum can be hard to find in stores.
Guar gum itself is a bargain for another reason: guar gum is 1/3 the price of xanthan gum, and yet it's one of the standard binders, xanthan gum and pre-gel starch being the others. (For those of you less familiar with gluten-free baking, you have to have a binder, kind of like an extra required flour, to make up for the lack of gluten.)
Finally, hats off to Bob's Red Mill for selling this cheaply and in bulk. The celiac community is somewhat hostage to vendors who sell what they can eat--and there are those who take advantage of that. Selling guar gum at this price is another example of Bob's Red Mill having integrity. Yay!

Better Option for us than Xanthan GumOct 09, 2008
By J. Burns I use this product as a "binder" in gluten-free baking as a substitute where recipes call for xanthan gum. Xanthan gum is much more expensive. I use it 1:1 as a replacement & works great (& has no corn derivatives).

This product is great for thickening smoothies. Whey powders blend to a thin consistency. Adding a level teaspoon of guar gum gives it just the right thickness. Makes you feel that you're getting a "healthy" milk shake.

Was not a good alternativeOct 11, 2011
By My Penny's Worth I make gluten-free bread and had been using xanthan gum as a binder, but I thought that I could substitute the guar gum, which is cheaper. My bread was falling apart when I attempted to pick it up. The bread left a slimy film on my tongue, and it was making me cough.
I wanted to buy less, but the 3 bag purchase was not available. Now I have almost eight full bags of guar gum that I need to find a use for.

Replacement for Xanthan?Sep 08, 2009
By Greta Henricksen I wouldn't try to use this as a replacement for Xanthan gum. However; it does work quite well if you use it with xanthan gum. For example if a recipe calls for two teaspoons of xanthan I might use gaur gum for one of those teaspoons.
