This is my daily breakfast of choice, higher in protein then Oatmeal, and tons of fiber. It's an acquired taste (a little earthy), and can be a little "soupy" but I cook it with a tablespoon or so of oat bran for thickening. After cooking, I add a little agave nector for sweetness, and ground flaxseed, bee pollen and/or whatever else I have handy; I have even added a scoop of whey protein for additional benefits (vanilla works great!).

Use 1/3 cup of grain and 1 cup of water and cook into a cereal. Add this to your favorite bread recipe.
Adds moistness, nutty flavor and nutrition to homemade bread.

I've been branching out into various grains in the past year and amaranth is one of the newer ones for me. I think it tastes great (seems a little "nutty" tasting), but like others here, I don't know what I can do with it. What I DO though, is cook it up as a cereal according to the package directions, then put about 1 t Vietnamese Ground Cinnamon (this is the BEST cinnamon ever!!) for a topping. Yum!

As for Bob's Red Mill, they get five stars for sure... I like their company quite a lot and use other grains they sell besides the amaranth. I highly recommend them.

Love Bob's Red Mill products. Amaranth is an acquired taste, but so nutritious that it's worth the "effort." Will buy again and again!
