Sweeter than sweetDec 14, 2008
By J. Osborn Fructose is sweeter than sweet and does not affect blood sugar they way sugar does. While sucrose (cane sugar) causes a spike in blood sugar, fructose doesn't. BTW, crystalized fructose (which this is) isn't like high fructose corn syrup. There are sites online where you can do research on the issue. I have been baking with fructose and it is great as a sugar replacement except for one thing. Don't expect crispy. Fructose, once it is re-hydrated, tends to stay that way. This property makes it absolutely and totally great for cakes, muffins, biscuits, quick breads, etc., and makes these softer and more tender... BUT it doesn't work for crispy cookies. It works for softer, chewy cookies, but if you want a crisp cookie, don't use this. I did, and the cookies turned out almost like a hard but chewy candy. Oops! I learned! My husband likes crispy cookies so I make them for him with regular sugar.

Pure non-glucose sweetnerJan 09, 2010

For those of us who cannot tolerate or chose not to consume glucose, this product is a pure, white, free-flowing natural organic sweetening agent. It is substantially sweeter than cane sugar, but does not include any of the chemicals in artificial sweetening agents.

Fructose is good when used rightFeb 11, 2008
By Shopping Shrew I have used fructose in the early 80's and there is a a trick to it. Don't use it in anything that is over 200 degrees F, use 1/2 the amt that you would of normal sugar and mix it with sun crystals for a "southern sweet" taste.

By Verla Miller This item is a great buy. If I had been able to get this locally I probably would have gone with that since the S&H was a bit too much. But the item itself was good. It came in good time and was excellently boxed.
