Don't forget the honey-butter!Feb 10, 2008
By C. Mullenaux A few months ago some family members brought us a bag of this pancake mix from their visit to an Army base in Germany. At first we were hesitant to use it, but within a couple weeks it was all gone. The first time I made them we used maple syrup on top, but it just doesn't taste right. The next time we 86'd the syrup and spread honey butter on top and they were perfect! My picky three year old son nicknamed them "Tasty Pancakes" and asks for them often, but the problem is finding them out here in the western USA. We have searched all the local stores and no one carries it, so we searched online and found them on many websites, with amazon and the manufacturer's website being the best prices. After you add shipping costs to the latter, amazon is by far cheaper with the super saver free shipping, and I love that you can order 6 bags at a time rather than 12 (don't want it to go bad). These are definitely worth a try if you like sweet potatoes, and be aware that they do have a good deal of spice (cinnamon and such) in them. YUMMY!
UPDATE: When they arrived, three of the six bags had small holes in them near the seams. It looks like they just weren't sealed properly at the factory. I just wanted to add this note so other buyers can be aware that there may be some of the mix spilled in the box they're shipped in, so don't order it along with something else that you wouldn't want to clean the mix off of or for the mix to possibly get inside of.

Switched to this mix and never looked backFeb 06, 2011
By V. Moye I bumped into this mix in a Harris Teeter about a year ago and thought I would try it since it was fairly inexepensive and the sweet potato seemed interesting. The first pancakes I made with this mix were AMAZING. All I had to do was add a little water and out came the best pancakes I'd ever tasted, that just happened to pack 2 grams of fiber, 4 grams of protein, and only 2 grams of fat per serving (a serving is about 2- 4" pancakes and has 200 calories, 400 mg of sodium, and 13 grams of sugars). I still won't consider pancakes an everyday treat, but I eat these about once a week now, and I don't make any other kind of pancakes. I eat these with a touch of maple syrup. Everyone I have fed them to has loved them. I tried using this mix to make belgian waffles as well and they weren't bad, but definitely weren't as good as the pancakes. I may try again with seltzer water instead to make them fluffier.

I recently stayed at a lovely bed and breakfast in the Southwest. They served breakfast each morning and the first meal they served me had these luscious light pancakes - which I thought must be very delicious whole wheat. So I asked for the recipe, please. I was surprised when the cook brought me a package of Bruce's sweet potato pancake mix! I resisted stopping by the local market to buy some and take it home - I was traveling and had a week of travel ahead of me. I knew I could find it on Amazon! How convenient is that!
