The DeLallo instant Polent is a excellent product. It cooks in 1 minute once the water is boiling, and it is very easy to keep it from developing lumps as long as you stir it until it firms up.

Polenta is generally not a week-day meal, if made the old fashioned way. However, quick-cooking polenta opens up that possibility. This particular version cooks in only 1 minute. I was pleased with the results, as was my husband. It is a fair amount of polenta to buy at once (12 boxes), but should last until we manage to eat all of it.

This really does cook up in a minute. All you do is stir it slowly into rapidly boiling water. It's ideal as a base for other dishes. Living in an isolated area I also really appreciate that I can store it in my pantry until ready to use. As a back-camping food where extra weight and fuel are closely calculated, it's ideal.
