Baking staple in my houseMar 10, 2008
By Jessica L. Hoppe I have used this in every baked good that I have made - from cookies to pancakes, it works really well. I've gone through several boxes over the past few years and will continue to use this. It's cheap, easy to use, and works well.

Restricted diets bewareJan 01, 2011

MacCionnaith For those on a restricted diet or concerned about what you are ingesting, be aware that egg replacer contains both corn-derived ingredients as well as Carboxymethylcellulose, a chemical thickener that is indigestible and can cause diarrhea, constipation and bloating. Those concerned about your intake of random chemical compounds should reconsider this particular thickener/rising agent in your baking and cooking.

By gapeachpc This works great if you need fewer than 2-3 eggs. The real secret to getting it to work really well seems to be beating it with a whisk until it's almost stiff like egg whites. That helps it to fluff and work. Do not try to just dump it in with a mix. I fold in the egg replacer much like I would egg whites near the end of whatever I'm mixing. It works great then--great for pancakes, cakes, and other similar baking things. I've also used it in casseroles that call for eggs.

My niece lives with several sever food allergies including eggs and nuts. This can make baked items and special holiday meals difficult to prepare for her. This product has been a great replacement in eggs for many baked items. The only difference I have noticed is that in items with a more subtle flavor there is a slight tapioca flavor provided by this product. In more strongly flavored items there is no noticeable difference. I have served baked goods with this product to larger groups of people with rave reviews.
I have tried to use this in other recipes that call for eggs, namely pad thai, and it did not work well. It created a gummy texture and muddled the flavors of the dish.
I highly recommend this product as an egg replacer for baked goods.

This product has been a lifesaver when it comes to mixes that call for eggs. I'm not sure how the mixes would turn out with real eggs, but I have no complaints on how they turn out using the egg replacer. I have used this extensively with the Namaste Foods mixes and even though the mixes call for multiple eggs, they turn out great using the egg replacer. Now only if they could develop a way to make scrambled eggs..
