The real dealMay 13, 2011
By Jacob D I lived in Belgium for several years and loved the waffles from Liege with their crunchy sugar crystals in the center. I've tried to make my own and have had little success. The sugar really makes it what it is. You can try and break up sugar cubes, but they usually dissolve (undesired) when I do that. I recently had some at a restaurant in Salt Lake called Bruges Waffles. This was a legit, Belgian run waffle shop (go there!). I talked to one of the workers about my failed attempt to recreate these wonders. He asked, in a French accent, where found the pearled sugar. I hadn't found any I replied. You can only get it in Belgium, he answered. I hopped on Amazon, and there it was. I admit it is expensive, but I love 'em so I bought the larger quantity, which brings down the price. The box comes with a recipe that works really well. They recommend you use a whole 8oz box for one batch, but I use 1/2 box and it seems perfect. These are delicious. All I need to do now if find the right amount of cinnamon to add so they taste like those found at the Gare de Liege.

This is a very good product with a super Waffle Recipe on back - wow they are good! A little pricey but, I buy Pearl Sugar by the case on Amazon.com and it brings the cost down. Also available on eBay from my Danish friend who lives in the south (USA). The waffles that you make with this product are called Liege Belgian Waffles. NOT DIET FOOD AND VERY ADDICTING - even cold they are outrageously good. Slap some Vanilla Ice Cream with berry of your choice - over the top!
For a Liege Waffle recipe we will need: 2 cups flour 1 cup pearl sugar 1 cup melted butter 3 eggs 1 (1/4 ounce) package yeast 1/3 cup lukewarm water 1 1/2 tablespoons sugar 1/8 teaspoon salt 2 to 3 teaspoons Pure Mexican Vanilla - substitute store brand Pure Vanilla (Tip - Mexican or any other vanilla should not contain syrup or sugars of any kind this is a cheap filler)
How to make Liege Waffles in nine easy steps: 1. Take the lukewarm water and mix in yeast, 1 1/2 tablespoon sugar and salt. Let the yeast develop for 15 minutes. In the meanwhile you can melt the butter, but be careful - do not burn it.
2. Now take a large bowl and put in the flour, make a hole in the middle, pour in the yeast that you made in step one. Also add eggs and melted butter and knead until you get nice and even dough. Then let it rest so the yeast does it's magic and the dough doubles.
3. Now take pearl sugar and gently mix it in.
4. Again, let it rest for 15 minutes, in the meanwhile you can turn on the waffle maker so its nice and hot.
5. All there is left is to pour the waffle dough into the waffle maker and bake for 3-5 minutes. Because we mixed in the sugar late in the process it will melt and caramelize and give that special Liege waffle taste. Just be careful when you take them out of the waffle maker, caramelized sugar can make them sticky.
NOTE there are different kinds of Pearl Sugar - know what you are buying and for what!

By David R. Johnson Saw a Bobby Flay Showdown using this type of sugar for liege waffles. The first time we used them whole and the waffles were fantastic but hard to get out of the waffle iron. So the next time we broke them up a bit and they seemed to work a lot better with our waffle iron. The waffles are delicious! Soft and crunchy, warm and sweet.

By Book Reader Lars' pearl sugar is just what I was looking for to make Liege Belgian waffles! They do just the right amount of melting when you heat the waffles. I only wish the packages were bigger. I always use a large percentage of the bag and then have a little bit left over, but not enough to make another batch. That's why the 12 pack is great!
