Canella is REAL cinnamon from Sri Lanka, not the cinnamon most Americans use which is actually a cousin of canela, called Cassia. Real cinnamon (canela) is milder and has no heat, so will not upset your stomach. Usually canela is ground right when you need it, but the powder is also available. (If the spice is called cinnamon on the label, but is not from Sri Lanka, it is probably cassia.) If you want the "punch" of cinnamon (say in curry) this is not the kind to use. But in baking, sweets, hot cocoa, it is PERFECT! We use the stick as stirrers, too, to let the spice gently infuse itself into the drink.

Very pleased! I use these sticks to make White Hot Chocolate so I go through a lot of cinnamon sticks especially this time of year. Excellent buy compared to the grocery store price. I like the larger size also.

This is the Real Cinnamon (canela) not the Chinese cinnamon (cassia). What you get is 12 packs of long cinnamon sticks. The sticks average between 5 to 5 1/4 inches (see pics). Each pack varies in quantity. One pack may have 4 sticks the other may have 3, another 5 and so on. I bought these to use in my tea. When making tea I use 1 stick of Melissa's cinnamon compared to 4 sticks of the store bought cinnamon. This cinnamon has a sweet and delicate taste compared to the strong peppery taste from store bought cinnamon. This cinnamon is also soft and easy to grind up for use in baking. Real cinnamon vs cassia make a huge difference to your recipe. 5 stars for a great product.
Here is how you tell the difference between real cinnamon and cassia. Canela cinnamon sticks appear rolled in one direction, similar to a rolled up newspaper. Cassia sticks curl inward from both sides toward the center. Cassia Cinnamon bark is thicker those making the stick hard. In contrast canela is soft easy to grind up and one can see the bristles. "Both cassia and real cinnamon contain coumarin, a fragrant chemical compound that can be toxic in large amounts. Real cinnamon contains about 0.004 percent of coumarin, which is a very small amount. Cassia or "fake cinnamon" contains much more, at about 5 percent." Coumarin is known to cause liver and kidney damage in "high" concentrations.
