Melissa's Piloncillo Brown Sugar Cones can be used in meringues, syrups, ice cream, sherbet, glazes, pastries and candies and is an essential ingredient in many foods. Sugar is extracted from sugar cane by crushing it soon after harvest. The cane juice is then processed in a variety of ways. Unrefined pure cane sugar, in the form of cones is known as Piloncillo. Piloncillo is the Spanish name for "brown sugar cones." Especially popular in Mexican dessert dishes, piloncillo can be used to sweeten many favorite meals and even coffee. The equivalent of 3/4 cup packed brown sugar, one Piloncillo cone can be used to adjust the texture and taste of many foods and works very well when combined with cinnamon.

There are actually two varieties of piloncillo produced-one is lighter (blanco) and one darker (oscuro) If you find this product too weak for your tastes you may wish to seek out the oscuro.This light product is great in flan, sweet potatoes, etc.

A friend of mine, who's a professional chef, recommended this product to me and I'm so grateful. I never use US made brown sugar anymore. I always subsitute using this product. It really brings out the flavor and makes chocolate really POP!!
