While we certainly enjoy Pamela's chocolate cake, this vanilla cake is exceptional. I always add to my recipes; just can't seem to let them be, so I add an extra egg or some sour cream or some organic grated coconut with some coconut or almond flavoring and this just can't be beat. Frost it with the vanilla frosting to which organic grated coconut has been added or the dark chocolate frosting and watch it disappear!! I am surprised that some cooks have found a poor texture. This always turns out perfectly and I am a high altitude baker (Colorado Springs). I do use coconut oil instead of butter; maybe that is the difference.

One of the best "VANILLA" cake mixes available. Many products made with chocolate have a great texture. But it is difficult to find a vanilla cake mix with decent texture.

My Daughter asked for a carrot cake for her birthday. I was skeptical that I could make a wheat-free carrot cake, but the Pamela's Vanilla Cake Mix had the recipe right on the side of the bag. I followed the directions exactly and the cake turned out perfect. Everyone who tried it couldn't tell it was wheat-free. It made a moist, flavorful cake. I love all of the Pamela's products we've tried!

Great texture and taste. Makes a good pineapple coconut cake. Today, I took a batch of cupcakes to a BD party (iced with Pillsbury Fluffy White icing and coconut) and didn't bring any home. Everyone was astonished that it was GF (all non-Celiacs).
One package makes one layer of a cake or 14 cupcakes (but I always make 12 really big ones).
