Delicious frosting!Dec 16, 2008
By CJS I make this frosting with spectrum palm oil shortening to keep it dairy free and it is absolutely delicious! I've used it on cakes/cupcakes as well as to frost cookies and just love it! I think it's even better than non-gluten free/dairy free frosting. YUM!

I just made a wonderful coconut cake with Pamela's cake mix and Pamela's vanilla frosting mix. I see that one reviewer thought it was too sweet, but I added organic grated unsweetened coconut to the frosting before smoothing it on the cake and maybe that was enough to tone it down a bit, and we thought it was delicious. This frosting is definitely a keeper!

I am surprised to be writing that I am disappointed in a Pamela's product having always been a fan. When the frostings came out I was excited to have a convenient source of frosting in a pinch. The directions were easy, the prep a breeze but the final product fell short. The frosting was too sweet with an overpowering vanilla taste-and I love vanilla. I would have to say the vanilla tasted artificial since it was so strong. I make a beautiful vanilla buttercream and although I did not expect a final product of this caliber, I expected better than what I tasted. Skip this product and take a few extra minutes to make your own.

This tasted good and did not have the after taste that canned icings have. It's not too creamy but a little stiff going by the directions.

By Abigail Reece I hadn't had frosting for many months when I made Pamela's Vanilla Frosting mix. As a Type II diabetic and being gluten intolerant, it was something I felt I had to do without. BUT...I had had a wonderful gluten-free chocolate cake made from a Betty Crocker mix and I had felt it was just a little plain. For the next cake I wanted a little more pizzaz. Amazon had Pamela's Vanilla Frosting mix on sale so I decided to give it a try. It was fantastic; my taste buds danced on my tongue when the first bite passed my lips! It was sweet with a light texture and literally melted on my tongue. I knew I was safe from reactions to gluten and I had taken the proper steps to manage my diabetes in order to allow me the pleasure of this snack. I can't treat myself like this very often but I would recommend this product to anyone. Just don't expect it to be a pure white color--it's more of a cream color.
