Excellent sweet-hot glaze!Apr 02, 2008

I'm an avid cook and experimenter with commercial and homemade spice mixes. I'd been looking for a 'glaze' type of mixture, and had never tried theirs. I admit that I was skeptical at first - with a brand name like 'Urban Accents' it sounds like they should be selling imitation teak furniture at Cost Plus World Market - but I'm glad I gambled. This is an excellent spice 'glaze', particularly with pork and fish.
Using a liberal amount of olive oil helps to 'activate' the mix's primary component, which is a type of granulated honey. 30-60 minutes in the fridge and it softens and liquifies into a nice glaze. The result after roasting is a slightly zingy, sweet flavor with a nice red finish.
The predominant note in the glaze is the sweet honey side: those who want more of a Santa Fe / chipotle flavor are advised to put a dash of cayenne along with the mix. This works best on pork (ribs particularly), salmon, and, interestingly enough, catfish and very delicate white-fleshed filets such as halibut and tilefish.
One caveat to using this mix in the oven: the glaze can 'carbonize' along the side where the food meets the pan. Use a non-stick pan and thin-edged spatula to get to the filet without breaking it up. And be prepared to soak the pan in the sink afterwards to loosen any residual crusts.
